• The Kalita Wave has three small holes and a flat bottom, slowing water flow. • A slightly coarser grind is suitable for the Kalita Wave. • The Peru Chinos coffee is used in the video, a regenerative organic offering. • The coffee is ground on the fine side of medium. • Rinsing the filter removes paper taste and preheats the vessel and brewer. • A 1:17 ratio is used to highlight the coffee's clarity and openness. • For a stronger cup, try a 1:15 ratio.
Recipe Steps
Rinse the filter and preheat the brewer and vessel. Discard rinse water. Add coffee to the brewer and tare the scale.

Start timer and bloom with 50g of water, saturating all grounds.

Pour 140g of water, bringing the scale to 190g.

Add 100g of water, bringing the scale to 290g.

Add final 100g of water.

Stop brewing, pull off the brewer, and discard the filter and grounds.
