Tips & Preparation
• Kalita Wave is a flat bottom filter which gives a very even flow. • Kalita has three small holes at the bottom restricting the flow. • Use a good pouring kettle with a gooseneck spout and temperature control. • Rinse paper filter to remove papery taste and heat up the brewer. • Shake the filter gently to level the coffee bed. • Swirl or stir the brewed coffee to mix extraction levels. • Let the coffee cool down a little before drinking.

Start pouring in the middle and make a small spiral around to the edge, using about 65g of water for the bloom.

Start pouring again in the middle, maintaining an even flow rate in a spiral to the sidewall and back to the middle.
Continue pouring, aiming to pour 500g of water in 1 minute and 45 seconds.

Allow the coffee to draw down for an additional 45 seconds to 1 minute and 15 seconds.

Remove the filter.
