Tips & Preparation
Notes:
- The brewing process consists of four pours totaling 700 grams of water.
- Pour from the center, moving in concentric laps outwards and back to the center.
- Each lap should take about a second.
- Total brew time is typically around 4:00, but can be longer for lighter roasted, higher elevation coffees.
Preparation:
- Use a six-cup Chemex brewer.
- Use Chemex filter.
- Grind coffee to a medium-coarse level, similar to sea salt, slightly finer than French Press
- Ensure the tri-fold portion of the filter is facing the pouring spout of the brewer.
- Water temperature should be between 96.1-98.9°C (96.1-98.9°C).
- Rinse the filter thoroughly to preheat the carafe and remove off flavors.
Recipe Steps

Start timer and begin the bloom pour, spiraling out and back until the coffee is completely saturated, using 100g of water.

Start the 2nd pour, spiraling out towards the edge of the slurry before spiraling back, bringing the water weight up to 300g.

Start the 3rd pour, using the same pouring pattern, bringing the water weight up to 500g.

Begin the 4th and final pour, focusing on a consistent pour pattern, bringing the water weight up to 700g.
4:00
Allow the water to finish dripping through the filter.
