"From Ratnagiri Estate owned by Ashok Patre, a legend in Indian speciality coffee. This coffee undergoes a 54-hour extended lab yeast and lactic fermented washed process. The Catuai varietal is grown at 4450 feet elevation and processed using controlled fermentation in a nitrogen-rich environment with specific yeast strains and lactic acid bacteria. After fermentation, the coffee is washed and dried in a controlled dehumidification dark room at 15% relative humidity for 8 days."
