They are passionate about specialty coffee production and experimental processes, like thermal shock. This blend is a combination of three coffees from the Vergara family, processed as naturals with a thermal shock protocol. The coffee cherries undergo a series of oxidation and anaerobic fermentation steps before drying. The blend features vibrant and complex flavors, including red fruits, blue razz, strawberry candy, fuzzy peach, and eucalyptus. It's a funky and intense coffee, not for the faint of heart."
