"Another coffee we debuted at SCA 2024, Fabiola Ortega is filled with pomegranate, grape, and honey. Fabiola Ortega and her family own and operate Velvet Bliss, a 5 hectare farm that plays a vital role in supporting the local ecosystem. One of the family's most cherished dreams is to achieve Rainforest certification for their farm. Through training and participation in innovative initiatives like the cupping school (with help from long-time partner InConexus), the Ortega family have deepened their understanding of their coffee and its unique characteristics. This coffee first fermented in cherry for 80 hours before being de-pulped (without water) and fermented again in tanks for another 80 hours. The coffee cherries were then placed on air-flow canopy beds for 22-26 days to finish the drying process."
