"Just an hour from Manzanares, the small community of Montebonito is nestled high in the Colombian Andes at altitudes between 1,850 and 2,100 meters. This coffee represents an extension of the Reforest project beyond Manzanares. Most producers here remain deeply traditional, cultivating mainly Caturra, but renewal programs have introduced greater education in specialty coffee production. Processing begins with handpicked Castillo Naranjal cherries undergoing 12 to 14 hours of aerobic fermentation in open concrete tanks before being depulped, washed, and dried on sun canopies for 5 days, followed by a 30-day stabilization period in GrainPro bags."
