"From Finca El Eucalipto in Tabaconas, Cajamarca, Peru. This washed microlot comes via Richard Cotrina, member of Aromas del Valle cooperative. In northern Peru, distance shapes everything - farms are often hours from market. Cherries are floated, fermented for 60 hours, then pulped, washed, and dried slowly on raised beds under cover for 15-18 days. Recent co-op work on fermentation brings more clarity and complexity."
