Shyira Honey

"Built in 2017, Shyira Washing Station sits at 2000 MASL in one of Rwanda's highest coffee-growing regions, collecting cherry from neighboring producers between 2000-2400 MASL. All cherry is hand-sorted before a pre-pulp float to remove underripe or damaged cherry and foreign objects. The cherries are then floated in pre-pulping tanks, pulped, and dried on raised beds. Every Muraho washing station has its own song to instill pride and ownership among workers, who sing and dance while stomping on parchment during fermentation to assist the process."
