"From Bella Alejandria farm in Huila, Colombia, produced by Wilder Lazo. This Geisha undergoes a meticulous double fermentation process: first sorted by hand, then floated to remove pulp. Initial fermentation for 140 hours in GrainPro bags with mucilage remaining, emphasizing bright floral and citrus aromatics. Then fermented in plastic tanks for 2 days, and dried for 18 days under the sun. During drying, tangerine peels are added to the wet parchment to infuse extra aroma and amplify floral notes. Finally, stabilized for 25 days in GrainPro bags before milling."
