"From Mikava farm in Colombia, grown by Paul Doyle and his son Kevin. Mikava has gained acclaim worldwide, winning national and international competitions. This Gesha undergoes carbonic maceration (CM) natural process - cherries are placed in sealed tanks, injected with CO2, and monitored for pH and temperature throughout fermentation. Afterward, transported to Marsella and dried using solar dryer for up to 60 days until ideal moisture is reached."
