Shyira

"Built in 2017, Shyira Washing Station sits at 2000 MASL in one of Rwanda's highest coffee-growing regions, collecting cherry from neighboring producers between 2000-2400 MASL. All cherry is hand-sorted before a pre-pulp float to remove underripe or damaged cherry and foreign objects. After pulping, the coffee undergoes fermentation with a unique tradition: workers sing their washing station song while stomping on the parchment in the fermentation tanks, assisting the process through agitation."
