"Colombia El Renacer is a specialty coffee from the Chinchiná, Caldas region, grown at an altitude of 1400-1800 meters above sea level. The 30-hectare farm belongs to Elmer Restrepo, who has been involved with coffee for nearly four decades - from processing work to developing his own production and export. Various varieties are grown on the farm, including Pink Bourbon, Geisha, SL28, Papayo, Red Bourbon, Castillo and Caturra, which combined with the growing altitude allows for a wide spectrum of flavor profiles. The coffee underwent a complex fermentation process, including initial oxidation of whole cherries, then anaerobic fermentation in the juice of the same coffee fruit for approximately 72 hours. After fermentation, the beans are thoroughly washed and dried on raised beds for 8-12 days, ensuring cleanliness and consistency of profile. In the cup there are notes of orange zest, amaretto and citrus, lightly fermented acidity reminiscent of pickled lemon, broken by the sweet, dessert association of poppy seed cake. The profile is complex, intense and multidimensional."
