"Produced by Vicente Guevara Cotrina on his 1.5-hectare farm El Chirimoyo in Cajamarca, Peru, named after the custard apple trees that grow there. Vicente replaced cattle pastures with coffee trees a decade ago. Cherries undergo a 60-hour fermentation in cement tanks followed by drying in covered solar houses for 10–20 days. Scored 86.5 points by the roaster."
