Highlights
“Aquiares Estate has grown coffee continuously since 1890 on the fertile slopes of the Turrialba Volcano, and at 924 hectares with roughly 80% planted under shade-grown Arabica it is one of Costa Rica's oldest and largest farms. This lot is Esperanza, an F1 hybrid bred by CIRAD, PROMECAFE and CATIE from a cross of T5296 Sarchimor and the Ethiopian accession ET25, chosen for large bean size and resistance to coffee leaf rust. Only cherries averaging 97% fully ripe are used, and they are dried whole: two days on ceramic patios, around ten days on raised African beds at 28-45 C, then a final day in a Guardiola dryer to stabilise moisture.”
