In 2017, the families turned their focus further towards specialty processing and growing unique varieties such as this distinct Wush Wush. Naturally processed and carefully hand-picked cherries are left to ripen before being laid on raised beds to dry in the open air, raked frequently to ensure consistent drying. The result is an expressive, layered, and fruit-forward varietal with vibrant tropical fruit, floral sweetness, and layered complexity.”
