“A fully washed Yellow Pacamara from the San Jose lot of Fincas Mierisch in Jinotega, Nicaragua, grown at 1,400 metres. Walnuts had already roasted Mierisch's El Triangulo Gesha this year and took this lot on the strength of Josef's past experience with it at other roasters. Despite the fully washed process it is bursting with tropical fruit and juiciness - apple, mango and tangerine with a green tea lift - closer to drinking a fruit tea than a conventional washed cup. Light roasted for filter and espresso.”
