“Sombra means 'shade' in Portuguese, and this Brazilian coffee is the flagship of Volcano's five-year agroforestry project with Fazenda Mio and the University of Espirito Santo, replanting native trees around water sources on the farm. Natural processed and roasted to a medium profile Volcano rates 4 on its light-to-dark scale. Toffee and dark chocolate up front, hazelnut and plum behind, sweet enough to stay generous through milk.”
