“A washed microlot from La Libertad in northern Peru, grown by second-generation farmer David Guevara Armijos on a small high-altitude farm. Cherry is depulped and fermented overnight, rinsed, then dried on raised beds before a slower 7-10 days on a lined patio that protects the sweetness. Roasted medium-light at strength 3: red grape, cranberry and vanilla over a silky body, at its best as filter.”
