Two light-medium microlots, Burundi Kibingo Honey and Ethiopia Mr. Kebede Genale Natural shine together, each showcasing a unique process and fermentation character around their exquisite varieties - Red Bourbon and Heirloom Ethiopia. Mr. Genale's dried-in-the-fruit Natural approach brings a candied floral and mildly Shiraz-like character, while preserving the varietal elegance from his cooler, high elevation farm. Kibingo Wet Mill on the other hand, casts a brown sugary, tropical juicy profile by a slow drying Honey process that creates layers of sweetness. Blended together at a 60:40 Burundi-heavy ratio, they create a cup full of candied fruit, juiciness, and sugar browning sweetness, ideal for all brew methods, with cold brew and flash chilled methods specifically in mind.”
