“Finca Idealista, founded in 2007, has grown into a collective of nearly 100 farms in Matagalpa that works with Gold Mountain Coffee to connect exceptional lots directly with roasters. Vigilante first cupped this coffee with Gold Mountain's team at World of Coffee in San Diego. For the Orange Maceration, whole cherries undergo a double anaerobic fermentation alongside thousands of oranges grown at the farm, then spend nearly 40 days drying slowly on raised beds, producing tangerine and tropical fruit over dark chocolate and brown sugar.”
