Highlights
“Ndiaini is a shared processing station within the Rumukia Farmers Cooperative Society in Nyeri County, Kenya, receiving cherry from around 315 smallholders who farm plots of half an acre to an acre. This lot is peaberry: the single, rounder seed that develops inside a small share of cherries and is sorted out separately during milling. Cherry is sorted, depulped, fermented overnight and washed, then dried on raised tables for two to three weeks and rested before milling. Varieties are SL28, Ruiru 11 and Batian, grown at approximately 1,800 metres. Green beans only: this coffee must be roasted before brewing.”
