“Finca Humana is unroasted green coffee from APROCOMSA, a cooperative of more than 1,500 producers working across Marcala, La Paz in Honduras, inside the protected Café de Marcala denomination of origin. Cherry is hand-picked and delivered to the cooperative's dedicated organic wet mill, floated to remove underripe fruit, then depulped and fermented for 24 hours before a low-water mechanical wash and slow patio drying to roughly 11% moisture. The lot blends Bourbon, Catuai, Caturra, Lempira, Ihcafe 90, Pacas and Typica, and is milled, density- and colour-sorted, then cupped by APROCOMSA's Q Graders before export. Green beans only: this coffee must be roasted before brewing.”
