Highlights
“Nguisse Nare has become a fixture on high-end Ethiopian menus, and not for the first time on Traffic's. He farms at 2,300 m in Bombe, where his 10-hectare Setame farm is planted mostly to 74158 and intercropped with taro and sweet potato, and he manages further farms at Kokose and Tiburo. Cherry comes from his own land plus roughly 60 neighbouring growers, and Setame now doubles as a drying station producing natural and anaerobic lots. Post-harvest runs under industry manager Demisse Turuma with farm manager Thomas Tosha on the ground; cherry is floated, then dried slowly on raised beds for around 20 days. Traffic roasts it light: mango, blackberry, kiwi.”
