“Lộc Rừng — 'nature's gift' — is a small Vietnamese processing operation run by Kate (Nguyễn Mỹ Duyên) and Leo (Nguyen Thanh Long) in Đưng K'nớ, where farms sit around 1,500 metres between two primary forests that hold the humidity steady and ripen cherry slowly. This is a co-fermentation of Vietnamese Catimor and Colombian Castillo with lychee and rose, roasted light. Traffic warns that co-ferments are not subtle, and this one is unapologetically floral.”
