Highlights
“Timeless bought this Colombia Nariño Geisha in a quantity small enough that the shop calls it a limited offering, and it is roasted to order on Mondays until the lot runs out. The processing is what makes it unusual: an anaerobic washed ferment that starts with a 20-hour pre-fermentation in whole cherry, then 210 hours sealed in oxygen-free tanks, with the grower adding a blend of mosto, molasses and beer hops to push the floral aromatics. Geisha itself is the fragile, slow-maturing variety that made Panama famous — here grown at 1,800 metres in Nariño. Bergamot and pineapple, black tea and lemonade, with an Apple Jacks finish. Light roast, packed in a custom 10 oz tin.”
