“Around 500 smallholder farmers deliver their coffee cherries to the Ixhuatlan AMSA wet mill. These producers have adopted regenerative agricultural practices aimed at restoring soil health, including hybrid varietals, organic fertilizers, and nitrogen-fixing bacteria. The cherries are floated, depupled, and dried on raised beds in solar dryers to 10-11.5% moisture.”
