“Edinson Argote is a passionate young coffee producer from Huila, Colombia whose journey to specialty coffee is one of resilience. Orphaned at three and raised by his sister, he left home at 11 to work, served 18 months in the army, and discovered his calling at a local coffee buying station in Acevedo-Huila. Today, at his farm Quebraditas, Argote produces this extraordinary Sudan Rume variety using an innovative thermal shock washed process—ripe cherries undergo a 24-hour anoxic ferment, are pulped and washed with 45°C+ water, then returned for another 24-hour anoxic ferment before a 62-hour aerobic yeast inoculation and a 5°C cold crash wash. The result is a bright and fruity cup with vibrant notes of tinned peach, mango, and rose water.”
