“Edinson Argote is a passionate young coffee producer from Huila, Colombia. Orphaned at three and raised by his sister, he left home at eleven and later served in the army. His introduction to specialty coffee came at twenty, working at a cousin's buying station in Acevedo-Huila where he developed a keen interest in cupping. The Quebraditas farm sits at 1700 masl, producing this Laurina variety with a thermal shock washed process involving 24-hour anoxic fermentation, pulping, 45°C+ water washing, a second 24-hour anoxic ferment, and a 62-hour aerobic yeast-inoculated fermentation with a 5°C cold wash crash. The result is a naturally low-caffeine coffee with violet and peach notes.”
