Highlights
“Chorro Alto is Luz Angela Rojas's ten-hectare family farm in Huila, run with the systems discipline she brought from years in healthcare administration: tight controls and precise lot separation. Edinson Argote, who ran quality at one of Colombia's most technical processing operations, leads the processing side at their Quebraditas project, and this Sidra was grown at Chorro Alto between 1,600 and 1,800 masl. Ripe cherries are floated, then fermented anaerobically for 48 hours in sealed, shaded barrels before drying at 38C for 72 hours and stabilising in GrainPro. Sidra reached Colombia as an Ethiopian landrace and was isolated through phenotype selection; here it reads heavy florals and juicy dark fruit.”
