“Though the lush, mountainous department of Cajamarca has long been perfectly suited to specialty coffee production, recent changes in climate have wreaked havoc on the region. Unexpected rains and fluctuating temperatures have the potential to compromise the delicate drying process crucial to overall cup quality. But the Marin family, along with many farmers in the region, have met these new challenges head-on, with innovations such as longer resting periods, mechanical drying, and more frequent harvests. Over the past seven years, they have modernised layout and varietal selection, maximizing each coffee plant's sun exposure while striving for clarity, sweetness, and sparkling acidity in each cup.”
