“Pulcal is Temple's selection from Hacienda Carmona, the Antigua farm Maria Zelaya Aguirre's grandfather bought in 1910 and that her family still runs. The washed lots are drawn from Bourbon, Caturra, Villa Sarchi and Catuai grown between 1,600 and 1,900 metres. Brown sugar and creamy almond butter lead, dried apricot adds gentle fruit, and the finish is complete and classic rather than showy.”
