“Fausto Romo is an accomplished producer in Ecuador's Pichincha Province. Originally invested in dairy farming, he shifted to coffee after purchasing his farm, La Carolina. Though the farm sits at only 1,300 masl, cool microclimates and cloud forest coverage allow for slower cherry maturation and refined, complex cup profiles. In this lot, the honey process imparts a glazed quality to classic Sidra fruit and botanical notes.”
