“Arley Arboleda is a 36-year-old second-generation producer growing Chiroso on two hectares at 2,100 masl in Urrao, Antioquia. He learned coffee farming from his father as a teenager and bought the land for Finca Los Guaicos in 2022 with the explicit goal of cultivating Chiroso alone. He processes with the regional cochadas method: each day's harvest is depulped into the same fermentation tank through the week, and the full tank is washed together. The cup is textbook Urrao Chiroso - sparkling acidity and light florals over deep caramel sweetness that turns to pineapple and soursop as it cools.”
