Highlights
“This lot comes from Alo village on the Bensa highlands, where Tamiru Tadesse's coffees rank among the most sought after in Ethiopia, and it belongs to the DIGS Project — an initiative built on traceability, experimental processing and better pay for producers. The cherries were hand-selected and fermented 48 hours in an anaerobic environment, then pulped and dried slowly on African beds with part of the mucilage kept for sweetness. Variety 74158, 88 points: mirabelle, bergamot and orange zest, an enveloping sweetness holding a lively but controlled acidity. Filter roast, harvest 2026, 200 g at €27.90.”
