“The Hachi Project is a binational collaboration founded by Diego Bermudez, Allan Hartmann and Matheus Antonaci, built around taking one variety as far as its terroir allows. Sudan Rume, the old Ethiopian landrace, is grown here in the Valle del Cauca at roughly 1,900 m and taken through an anaerobic natural fermentation. The cup lands between vivid kombava citrus, juicy blackberry and a cooling sliver of plum. 89 points, roasted light for filter. Harvest 2026, 100 g at 26.90 EUR.”
