Highlights
“Finca Milan, in Risaralda, is one of Colombia's references for precision fermentation, and NG stands for New Generation — innovation aimed at revealing potential the coffee already has rather than masking it. Ripe cherries are depulped and fermented with a culture of yeasts and bacteria developed on the farm itself, kept alive with a substrate of fruit, aromatic plants and local spices; depending on the harvest it runs five to ten days before washing and a slow, controlled drying. Lavender and rose water come first, then a fresh, juicy raspberry: delicate, floral, graceful. Castillo and Caturra, 2026 harvest, 88 points, roasted for filter, 200 g at €17.90.”
