Highlights
“Part of Swerl's ODD B collection, which finds a home for the small leftover lots at the end of each roast week. Roberto Mata Naranjo, a 50-year veteran of Costa Rican coffee, ferments whole cherries with juice from previous batches to inoculate them with lactic acid bacteria, seals them in stainless steel tanks for 72 hours, then dries them on raised African beds to 10-12% moisture at Las Nubes in Tarrazu. Roasted for espresso.”
