“Las Lajas is one of Costa Rica's most renowned micro mills, run by third-generation producers Oscar and Francisca Chacón in Sabanilla de Alajuela. The farm received organic certification in 2000 and is known for pioneering natural and honey processing. Black Diamond is their signature natural process, using only fully ripe cherries with Brix levels above 22%, sun-dried in a greenhouse for 22-30 days.”
