“Shyira Farmers is a community of approximately 1,900 smallholder coffee growers in the Nyabihu district of Rwanda, delivering cherries to the Shyira washing station. Situated at the highest elevations in Rwanda, the region's volcanic soil and cool climate create ideal conditions for slow-maturing cherries with concentrated sugars. This lot underwent an experimental anaerobic natural process: whole cherries were sealed under plastic sheets with water poured on top, creating an oxygen-free fermentation environment. After 48 hours, the sheets were pierced and water released to cool and slow the fermentation rate, resulting in a creamy, fruit-forward cup with layered floral notes.”
