Highlights
“Sourced from various smallholders in Valle del Cauca, Colombia, this decaf uses sugarcane-derived ethyl acetate (EA) to remove 97% of caffeine while preserving flavor. The region lies between Tatama National Park and Serrania de los Paraguas, a UNESCO Cultural Landscape where producers are committed to agroecology farming. The EA process begins with fermented molasses, creating an organic compound that binds to caffeine without stripping the bean's flavor.”
