Handpicked ripe red cherries are depulped with a portion of mucilage left intact, then fermented in air-tight stainless-steel tanks. The absence of oxygen stimulates an anaerobic fermentation that develops a unique series of acids such as lactic and malic, resulting in a very complex flavor. Dried to 11.5% moisture and rested to allow complex, exotic flavors to develop.”
