“This Chiroso lot comes from Paola and Carlos Trujillo, grown on the high altitude slopes of Caldono in Cauca at 1,700 masl, harvested at peak sweetness and washed on site using the anaerobic modulations Paola Trujillo has pioneered. Stitch roasts it as an omni roast, so the same bag holds up as espresso or filter. The cup is exceptionally floral with a hint of citrus: elderflower first, pineapple through the middle, and lemon tart on the finish.”
