“Clever Angel Villanueva Rafael has farmed a single hectare in Miraflores del Norte, Huabal, Jaen since he was 21, two decades of practice at 1,740 metres in volcanic loam. Washed slowly: cherries rest 12 hours, ferment 36 hours in sealed bags, get three washes and four hours of airing, then dry about 15 days in a solar dryer and rest another 15 before shipping.”
