“Finca Idealista is the flagship farm of Gold Mountain Coffee Growers, founded by Ben Weiner in Matagalpa, Nicaragua. The farm runs on principle: machetes instead of herbicides, a mushroom-based insect control instead of pesticides, volcanic filters to keep wash water out of the watershed, and nitrogen-rich compost from chickens roosting above it. Pickers are paid double local rates, and the farm even bought a rainforest to protect it. This black honey microlot grows Pacas and Caturra at 1,200 meters, processed at maximum mucilage and dried slowly in the sun for a full-bodied, sweet, layered cup.”
