“Santos Ismael Lopez built Los Encinos one harvest at a time, reinvesting each season's return until the plot in Guazpololo, La Paz reached the 3.5 hectares he works today. Cherries are picked by a team of three, floated, depulped the same day, fermented for 24 hours, then dried slowly on solar beds over 20 days. The variety is IH90, a Honduran cultivar normally grown lower down; at 1,800 m it gains sweetness and clarity.”
