The farm sits within the Cata Timaná project, a long-term collaboration built on education and respect for origin. The Bourbon Ají varietal is processed through a traditional washed method: hand-selected ripe cherries, controlled fermentation focused on clarity, thorough washing, and slow drying under controlled conditions.”
