“Mauricio Shattah grows this Red Gesha in the highest planted part of Finca La Negrita, above 2,000 m in a valley that only receives a couple of hours of sun a day. The cool winds slow cherry maturation and build sugars in the seed; Shattah then cleanses the cherries of yeasts and bacteria, ferments them in tank inoculated with baker's yeast and flushes the tank with nitrogen to cut astringency. Lot 21 is one of his competition lots, and its cup quality mirrors the red gesha Roosa used to win the 2024 UK Barista Championship.”
