“This is Special Guests' first Liberica purchase, a tiny five-kilogram green lot from My Liberica in Malaysia, where Jason Liew and his team are pushing the species into new territory. Liberica makes up only around 1% of global production yet thrives at just 40 to 60 metres above sea level, far below Arabica, as a taller plant with broad, thick leaves that shrug off pests and disease. For this lot the cherries were inoculated with selected specialty cultures and fermented for ten days, then dried as a natural in a dark room with controlled humidity and temperature. The result is tropical and intensely sweet with very little bitterness, and it took the roaster over a month to dial in a profile for the unusually large seeds. In the cup: carambola, jackfruit and cognac, packed as a 24 g dose in a reusable Weber Workshops Bean Cellar.”
