The Lost Origin cupping table has shown us many incredible coffees over the years we've worked together. This lot is from Santamaria, Boquete and processed at the Lost Origin lab in Panama City. The fermentation stage is carried out in custom-built stainless steel tanks, guided by two cultures, LOY-007 and LOY-012. The process lasted 7 days under controlled conditions at an average temperature of 8.63°C. Finally, the coffee is dried over 46.5 days in temperature and humidity-regulated drying rooms.
